I've definitely had my list of tracks that were fun, at just the right time with the visual, and complented the soundtrack it was on nicely. These are some favorites that helped make my anime experience that much better. Explanation optional.
1. Say Yes - Bubblegum Crisis: In the seventh episode, an idol named Vision sang this as her new single, and it was even accompanied with a video aside from the flashy concert. Definitely something that helped embody the BGC experience for me.
2. Riding in Your Valkyrie - Macross II: I will say this much, Macross II sure got some heat from plenty of people, but if there's one thing Macross always gets right it's the soundtrack. The flashy concert in the anime, combined with the always anthemic nature of a Macross track, Protoculture is here to stay.
3. The Vision of Escaflowne opening theme: Yoko Kanno was always one of the best for a good anime soundtrack, and she holds a great amount of songs to keep one interested for a good while. I felt Escaflowne captured what she did best, a flair for the grandose.
4. Only Yesterday end theme: If there was a perfect way to end a drama, look no further. Applied with a wave of childhood friends, Taeko would find her way with a theme that wished to follow suit.
5. Wings of Honneamise opening theme: Ryuichi Sakamoto is a great composer, his catalogue is endless, and this theme is probably one of the best things he's ever done; hands down.
I'd also like to mention Macross Plus, Angel's Egg, the Patlabor films, and Millenium Actress as others with great soundtracks. Please remember this is my opinion, not a guideline. I hope to hear all of your favorites and talk about them soon enough.
Oh god how many were there? Well here's a start....
Macross Plus theme song: Gorgeous. It was simply breathtaking.
Sailor Moon: All the songs are my number one favorites!!!
Magic User's Club: On the last episode, the ending song was BEAUTIFUL! They also occasionally played it throughout the series.
Maburaho OP theme: Anata no soba ni. Done

Macross Plus was the first anime I ever purchased, and the soundtrack no doubt still holds its impact to this day. It's nice to see you've got a variety of tracks that have made your experience wonderful (though I have yet to see Magic Users Club and Maburaho at the moment). Hopefully I'll get to hear more favs soon enough!

Escaflowne's opeining theme is called "Yakusoku no Iranai", or "No Promises are Necessary". Maaya Sakamoto is the one who sings it. She does such a wonderful job with this piece. Oh, I totally agree with you. Kanno was perfect for Escaflowne.
Though I'm pretty sure that this has been done before, I'l add a few of my favorite anime songs...

Nice to see your knowledge on Escaflowne, as I'm still not the sharpest for the titles of every song yet on it yet. Fine Colorday was also pretty catchy I might add.

I have all the Evangelion soundtracks but the second volume, and I can attest to how well that soundtrack definitely was, Cruel Angel's Thesis is certainly a classic. Noir's had some different music in it, so that choice was intriguing, and Slayers can always be counted on for a good number of memorable songs. Haven't seen Tsubasa or Rain yet, but I hope to sometime.
Some other favorites of mine include: "Rock Me" from Bubblegum Crisis, the You're Under Arrest OAV opening theme, and Nadia: Secret of Blue Water's opening/ending themes.

Kare Kano had some great music, I want to buy those soundtracks too, as the overall music tied in well along with the themes.
Dark Lord definitely has a variety of anime I have yet to see, though I hear only good things about Honey and Clover, along with Tsubasa Chronicles.
Nice to see such variety!

1. Hajime No Ippo - Under Star
2. Hajime No Ippo - Inner Light: Both this song and Under Star just capture the essence of Ippo perfectly. They convey a feeling of working hard towards your dreams. I love it when Inner Star plays during some of the fights. It gives me goosebumps because the matches get so intense.
3. Initial D - Remember Me
4. Initial D - Speedy Speed Boy
5. Initial D - Streets of Fire: The anime wasn't all that great, but these 3 Initial D songs rocked, and got my blood pumping during the driving scenes. Great on the road music. I just gotta fight the temptation to try a drift.
6. Eureka Seven - Days
7. Eureka Seven - Himitsu Kichi: Days conveys the sense of energy that Eureka Seven has to it, and Himitsu Kichi is just a nice and peaceful song that plays during the cool ending sequence, as the camera wanders around aimlessly.
8. Full Metal Alchemist - Ready Steady Go
9. Full Metal Alchemist - Undo
10. Full Metal Alchemist - Rewrite: Sure I've listened to these songs avidly since the anime has been out, but they're still very catchy. Especially Rewrite.
11. Blood+ - Season's Call: I don't really know what to say about this one. It just plain rocks. I really like the voclas and guitarist/s. It fits very well with the opening sequence too.

13. Eureka Seven - Shounen Heart
14. Eureka Seven - Taiyou no Mannaka he (Fly Away)

People must love slam dunking me with Full Metal Alchemist, a show I have yet to see (could that be a hint? nawww!). However, I am fluent with Love Hina and Real Bout High School (which would probably work for wrestling). Hajime no Ippo along with Eureka 7 are raved upon by a friend of mine, and Initial D must possess tunes that overshadow the actual production (from the sounds of it). Interesting to see Angelic Layer made a list too...

Pretty much whatever the pillows had on FLCL. It's not cause I have a huge love of japanese music or japanese rock(I don't have much exposure to it outside of this), or even because of FLCL. It's more or lesss because the pillows sound a lot like a lot of my favorite 90's alternative artists. A lot of the stuff reminds me of '90-'93 and '97-'99 era Blur, along with Weezer, Pixies and the likes.
So I love it. If I could pick a few songs...Carnival, Last Dinosaur, Advice.

A lot of Nuku Nuku songs emerged as favorites for myself, Cowboy Bebop definitely has a great soundtrack (for obvious reasons), and FLCL definitely had some cool music. The rest of your picks show a lot of different anime (some I have yet to see, some I need to see again) that I'm definitely interested in. Keep it up!

Wow, I remember Alchemy of Love, that was actually wasn't bad. Also, R.O.D. has some great jazzy tunes that fit the production perfectly!
Also, it is hilarious to see the listings of tracks being muddled on some releases.
For some other favorites of mine: I have most of the Evangelion soundtracks, both Mahoromatic soundtracks, Akira, Abenobashi Magical Shopping District, and R.O.D. TV series 1st volume (courtesy of my compliment above).

6. Ghost in the Shell: SAC - Inner Universe

9. Appleseed - I will Dive for You
10. Cowboy Bebop - Piano Black
A lot of these are also great with how they are used in the series but I would also include Stella By the Moor and Green Bird from Cowboy Bebop as examples of those unforgettable moments in a series made possible, in part, by music.

Wow, I've got some real interesting input this time. Gundam's music is priceless, Fist of the North Star is head punching material, and you can list more later too!
Cowboy Bebop never fails either, I loved Lain's music, and Noir always had some stylish turns. And of course I can't forget Escaflowne.
Chobits was definitely a fun series, and the music was pretty catchy to boot. Also, the reference to Dragon Half was classic, I remember how weird it was to listen to that song during the end credits my first time through!
If I missed any, it's because I have yet to hear them, but it's nice to see such variety come up as of late. Keep it up!

I enjoyed a lot of Lupin songs, believe it or not, I loved "Manhattan Joke" from Legend of the Gold of Babylon. The classic sounding themes are always worth a listen.
If I had the time and energy to think, I might create a top 10 or something... but I don't. So, in absolutely no order of fancy graphics, the favourites of mine from the top of my head are:

I am a man with much time, I've made some pretty hefty lists in my day, but a music one would definitely be fun. My lists for the "Favorite Game" thread, "Favorite Anime Directors" thread, and this one are a little over done (especially the game one). But I obviously love my stuff, so sue me.
Your list is full of songs I have yet to hear, but there's definitely some feedback on SAC and Hack that remains ever popular. However, Parakiss is a new one to add in, as I know little on that series. Interesting to see Sailor Moon again too.
Still, cool to hear your opinion nonetheless, regardless if I do need to watch some newer anime. Now if I can just pull my head out of the 80s and early 90s...

I don't really watch much newer stuff either, though I'm trying to change that :p ParaKiss I HAD to watch because, well, I loved the manga to death, and that's that. GitS:SAC I've only watched recently. Only thing that I'm really following as it comes out is Ouran, and then you have Roark and I watching Urusei Yatsura every night, since neither of us has seen it in its entirety.
They're good songs, at least I'd like to think so. As for Sailormoon, even Kain admits that Sailormoon's music is good :D Or maybe I just have interesting tastes, which I know to be the case...

lol! Well, I guess there is nothing wrong with having good taste! Though it is surprising to find out even Kain likes the music of Sailor Moon. I too have trouble watching newer shows (most of the anime I listed in my profile is 80s anime), though it certainly is possible.
I have all the volumes of UY, but those will be saved until I finish Vampire Princess Miyu (or a lot of other Animeigo dvds that I bought with it, which you already know about, lol!), Giant Robo, and Saber Marionette J to X. I wish I could describe why I liked the 80s so much (along with some 90s shows), but it just comes down to taste in the end I guess.

Towa no Hana by Ishida Yoko (Ai Yori Aoshi)
Yeah, the anime's some mediocre shounen romance, but I must give some kudos to the opening song. Something I listen to when I'm feeling down a bit, probably for its wonderfully-innocent touch to it.
Full Moon Sways by Sowelu (BECK)
Correct me if I'm wrong, but I believe that this is Sowelu's first ever song fully sung in English, and she hit the mark with this. This still remains as my favorite song by her. Mellow and emotional ;_;
Light of Love by Maaya Sakamoto (Brain Powerd)
The anime sucks to the core (just to put it mildly), but I'm not lying one bit when I say that this is Yoko Kanno and Maaya Sakamoto's best work so far IMHO. Yes, diss me all you want with 'What about Hemisphere and Yakusoku Iranai?" tirades, but I really believe that this song is unjustifiably underrated. The song sounds more like a story being told in a melodious manner, with some fast and slow portions.
Ave Maria by Jerzy Knetig (Cowboy Bebop)Very (possibly the most) poignant song among the superb songs featured in Cowboy Bebop. Not only is it done by Yoko Kanno-sama herself, but the song really embodied the dramatic and melancholic aspect of the series itself. My favorite CB song among the lot.
Days by Flow (Eureka Seven)
Yep, the song that never fails to make my feet tap everytime I listen to it. Normally, I don't favor songs by boybands, but I'll give this one an exception. When I feel like gettin' the groove on, I'll look no further.
Mezame by Kajiura Yuki (Mai-HiME)
The song that I would usually hear in my local discotheques. This head-nodding number really pumps up the adrenalin with its upbeat tempo. One of Kajiura's most noteworthy works around.
I Do by Ilaria Graziano (GITS: SAC 2nd GIG)
Yoko Kanno, you've done it again! This is the most emotional song in the entire GITS series, and this is unusual enough since many people have criticized how the series is too passive. Plus, the fact that the song is being done in Italian really gives it a unique, surreal touch to it. If only I can decipher the lyrics... -_-"
Alone Again by Iwasaki Taku (Rurouni Kenshin: Reminiscence)
This is the toughest choice of all, but eventually I singled this one out because it is the theme to the best ending I've ever watched. This is Iwasaki's greatest work in my humble opinion. Congrats to you, Iwasaki-sama.
There are a LOT more other songs that's worth mentioning, but I don't want to make my post too long. Other noteworthy songs include Paradise Kiss, NANA, Elfen Lied, RahXephon and Vision of Escaflowne.

Yeah, it is a pretty song, though I do like Emily Curtis's "What's It For?" better.

I didn't care for Ai Yori Aoshi, but it did have some pretty good music, and Brain Powerd was actually well done too. Honestly, it seems like some of the most unlikely works spawn such odd gems. And of course, I cannot forget BECK, which was loaded with excellent tunes.
So we have two Parakiss fans in here, hmmm....

All of them are just catchy to me and are songs you'll often catch me humming when alone.
Aoi Hitomi and Tomodachi are two songs I'm especially fond of, because they were the first anime aongs I ever memorized, and Escaflowne was something that brought me and my first best friend together after we met. :3

Oh my god!! There are so many different types of aniem aongs out there and equally as awesoem as the next. Some of my favorite are My Only Love-Sailor Moon. Ending Themes and Beginning Themes of Inuaysha. Naruto Themes and the Themes in the Inuyasha movies. Oh and the Chobits themes as well along with Mew Mew Power.

Of course it depends on the time and place you ask me, but I find that Blazin Beat, the opening theme of Initial D! 2nd Stage is a funky tune that doesn't appear to be mentioned too often.
At the moment, I'm still enjoying Split by Suneohair, which is the ending theme for H&CII. It just really mellows me out whenever I listen to it.

Magic Users Club! is one of my favorites. I have the whole show's english version memorized. I've slowly been working on a Sae costume since '04... I liked the series so much, the cultural festival episode inspired me to write a petition so we could have a cultural festival at my middle school.
And the music from MUC! is so soothing, playfu,l and upbeat. Definitely something I listen to when I need a pick-me-up.

A festival? Now that's something! Too bad my high school wouldn't allow that. Kinda reminds me when I tried promoting anime with The Wings of Honneamise, but everyone looked at me like I was a lunatic, making it more fun than it should've been.
MUC music seems to be having a nice showing in this thread.

A little drawn out, but I love my music!
Inuyasha:
Affections Touching Across Time - Extremely beautiful, and I find myself loving it to death.
Yura Yura - The ending theme to the second movie is catchy and I listen to it all the time.. It reminds me of magic.
Sango's Theme - Another beautiful song. The beginning reflects the sadness she feels on the inside, and then it switches to a more "bouncy" theme, which I enjoy very much.
My Will - This is another song I adore. I adore it to much I learned to play it on my saxophone. The extended version is amazing.
Rakuen - This is a very lovely song. 'nuff said.
Shakugan no Shana
Being - Being a catchy little theme song, I find myself listening to this very often. I can now play this song on my saxophone.
Akazukin Chacha
Egao Ga - This is a very beautiful song. I have been unable to track it down since the good old days, but this is still a favorite.
Cyborg 009
Genesis of Next - Despite how long it is, the song is bouncy and catchy and I love it so very much.
Death Note
Opening and Ending - Both of these songs are brilliant, yet I am unable to locate the names..
Hunter x Hunter
Pray - I recently obtained this song and I love it to death. Definately one of the best.
Popcorn - Just like Pray. Has NOTHING to do with Popcorn, by the way..
Mashou no Tenshi - Killua's character vocal, this song with the lyrics reflect Killua's inner self. While the lyrics suggest he is cold-hearted, the music itself leads the listener to believe that he is more gentle than deadly. A must-hear for anyone.
Inori - Kurapika's Character vocal. While I have not seen the lyrics, the song itself matches Kurapika perfectly. The opening sequence is very good, too.
Tobira - A gon and Killua duet. (There is also a Leorio/Kurapika version.) It's a bouncy, happy song that expresses the deep friendship between the two boys.
Kaze Muki Ga Kattara - Gon's character vocal. This song is as happy as the kid himself, and very enjoyable to hear.
Ohayou - The first opening theme of HxH, Ohayou just might be my favorite song, second only to Mashou no Tenshi.
Kaze no Uta - A beautiful ending theme.
Oh! My Goddess
Try to Wish - The ending song of the movie, this song is catchy. Not much else to say.

One song I did forget was Rewrite (or Reraito) by AKFG. Not only is it a wicked song, but as an opening, the lyrics seem to just fit the premise and themes of Fullmetal Alchemist so perfectly you'd almost be led to believe the song was made especially for the story.

There's so many...And I don't know the names to most of them and a lot of them arn't theme songs.
I like anything from especially "Ballad of the Fallen Angels" (or something like that) and "Call Me". "Call Me" was in Elglish, so I'm not sure if it's in the original version of the show.
I like the music to FLCL and Noir too.
I like some ending themes from InuYasha( I can't even remeber what episodes they were)
Some theme songs from Naruto....I'm no help here
The intro song to Paranoia Agent is a favorite
and anything from Berzerk- I love Earth and Forces most of all: Earth calms me down and Forces get's ge excited.
I really wish I knew the names to them or what episodes they are from

Oh my god! I have so many!
I like almost every track in the Rurouni Kenshin OST CD (esp. Kimi ni Fureru Dakede, 1/3 no Jounjo na Kanjo and 4th avenue cafe...)
I also like Hateshinaku Tooi Sora ni, Arigatou and the first ending song of Kyou Kara Maou (God...(?) Save our King)
Plus I like Tommorow (did I spelled it correctly?) of Full Metal Panic (Fuma-fu!) and the first four openings of Naruto
And of course Real Folk Blues of Cowboy Bebop and All Through the Night of Outlaw Star...
Plus many many more from Gate Keepers, Chance for a Goddess, Get Backers, Shaman King, Prince of Tennis and Kareshi kanojo no Jijyou!!!!

Lilium the theme song to Elfin Leid by Kumiko Noma. Its hard to beat the choir boys.
I like the intro song for the first season of Bleach.

While I posted my absolute fav above. On the drive home from work this evening I was listening to the Stand Alone Complex CD and was reminded how lovely some of the music is. And I thought it was worth a second post to remind everyone else of this. Especially Stamina Rose, Where Does This Ocean Go, Velveteen. Then there is fish~silent cruise! OK so I like the whole thing. And yes I even went back to the car to get the cd to ensure I had the titles right.

This song isn't for an anime, but rather a J-Drama:
Kou Shibasaki's "Katachi Aru Mono". I simply loved this song after I heard it for the first time.
As for anime songs:
